How to perform a ura-nage

Despite what certain smarks would have you believe, a ura-nage is not a “Rock Bottom” nor a “Book End” nor anything similar.

A ura-nage is a back throw. It is performed as such:

Place both of your arms around your opponent from his right side or from behind. Lift your opponent, and throw him over your left shoulder as you fall backwards. It is basically a “side suplex” in WWE terms.

There is a high risk of dropping your opponent on his/her head, so don’t do this move.

How to prepare Squirrel

Squirrel is edible and should be treated as small game. Gray squirrels have a less “gamey” flavor than red squirrels, and a thus preferred by most of your squirrel chefs.

Skinning
NOTE: Always wear gloves when skinning a squirrel.

Cut the tail bone from the bottom side, taking care not to cut through the skin. Holding the squirrel by the tail cut an opening in the skin the width of the back.

Turn the squirrel belly up, step on its tail. Pull the squirrel slowly up by it’s hind legs, until you are able to work the skin off of the front legs and head.

Pull the remaining skin off of the hind legs.

Further Preparation

Severe the head, and discard it along with the skin. Remove the feet and internal organs. Take ote of small glands underneath the small of the back and between the ribs and shoulders of the forelegs.

Cooking

Treat squirrel the same as one would pigeon or small game. Works with Brunswick stew.
Squirrel meat is also complemented by polenta.
